The Weekend Cookbook Challenge, hosted by Sara at I Like To Cook, is always one of my favorite blog events. There have been some great themes in the past. For this months challenge, the theme was "Lucky Number 7". Hrrrm. What in the !*#@ does that mean!?
Then it hit me...
Tyler Florence's face appeared before me like a mirage. While I have publicly professed my love for Tony Bourdain, my celebrity chef crush has always been Tyler Florence. He's the ideal man - he's hot and he can cook. What else do you really need?
Okay. He also cooks with bacon. Marry me, Tyler Florence.
I chose Tyler's "Avocado Salad with Lemon, Bacon, and Watercress" from Eat This Book because it had 7 ingredients in it.
We're all grown ups here...so I'll let you figure out where the lucky fits in. *ahem*
Avocado Salad with Lemon, Bacon, and Watercress - serves 4 to 6
1/2 pound sliced bacon
3 avocados, split, pitted, and peeled
Juice of 1 lemon
1/4 cup extra virgin olive oil
kosher salt
freshly ground black pepper
1/2 bunch of watercress, stems trimmed
Preheat the oven to 375F. Lay the bacon on a baking sheet lined with parchment paper and bake for 15 minutes, until crispy. Transfer the bacon to a plate lined with paper towels and let it drain for a couple of minutes.
Break or cut the avocado into chunks and arrange on a platter. Drizzle with the lemon juice and olive oil. Sprinkle with salt and pepper. Scatter the watercress over the avocado and top with the bacon.
